Spring!

Spring is polite. It will not barge into the house uninvited and displace winter's gloom. But you want spring's bright, warm company. So call it in: Throw open the windows, gather some flowers from the garden, begin a light and airy decorating project, and welcome this long-awaited guest into your home.
Personally I haven't really seen much of spring yet. But we are headed south for spring break and I hope to be able to dust off the flip flops and sun my toes! See ya when we get back!

Crusty Frying-pan Pizza

I found this recipe in the Mother Earth News magazine and thought it looked like fun to try. It's was really easy and baked in no time.


The dough says it takes 2 hours to rise but since I didn't read this part till about 4:30pm I decided my crust would have to rise in about a half hour....turned out just fine! This recipe bakes in a 10 or 12 inch cast-iron skillet. You can make it however you prefer: low salt, low fat, organic or double the cheese. There is hardly a way to fail other than having the water too hot, which kills the yeast.

Crust
1/2 package dry yeast or 1 1/8 teaspoon
1/2 cup warm or room temperature water
3/4 cup flour
3/4 tsp salt
3/4 tsp sugar


Toppings

1/2 cup tomato paste or pizza sauce
Fresh homegrown tomatoes or zucchini
3 fresh mushrooms, sliced
6 oz mozzarella cheese (I didn't measure this...you can never have too much cheese!)
1/4 pound pepperoni or cooked sausage
1/4 cup green pepper, chopped
1/4 cup onion, chopped
1/4 cup black olives, sliced
1/2 cup jalapeno peppers, sliced
1/2 tsp oregano

Add the yeast to the water and let it sit for 10 minutes. It should begin to look slightly foamy. Meanwhile, mix the flour, salt and sugar in a separate bowl. Then add the yeast mixture to those dry ingredients.

Stir it until it's well-mixed. The dough should be thick, requiring a little effort to mix it. Cover the bowl with plastic wrap or a clean kitchen towel, and let the dough rise in a warm area for 2 hours (or less). Grease your frying pan lightly if it's not already well seasoned.
After the dough has risen, take it out of the bowl and lay it on a floured table. Knead the dough. After 50 or so pushes, the dough should be smoother and less sticky. With a rolling pin, roll it into a round shape and lift it into the pan. The edges should come up a little on the side of the pan to form a rim.
Add your toppings in order. There's great variety in what can go on a pizza. You can add or delete any of the toppings I have mentioned.See all the cheese? Can't have too much cheese. Bake at 425 degrees for about 15 minutes, or until the cheese bubbles up and the top browns.
Serve your feast in the cast-iron fry pan, and use kitchen shears to cut it into wedges. I was going to take a picture of the pizza on our plates but once it was done and sat on the table we all forgot all about pictures and dug in. It was so yummy!! Guess I'll have to make it again so I can take more pictures.

Methodist Cookies

These are the BEST chocolate chip oatmeal cookies ever! They are chewy and chocolaty...just the best. Little known fact about me....I've made a lot of cookies in my time. I've NEVER been good at it. Growing up mom cut me off and wouldn't let me make anymore cause I was just wasting ingredients. They always turned out horrible.


Now I know it was the recipe! I finally found a recipe for the perfect chocolate chip oatmeal cookies in one of those church cookbooks that people give you. I swear I have a cookbook from every denomination out there. Methodist, Baptist, Lutheran, Catholic, Moravian, The Ladies of the Elks and a family collection of recipes from a past coworker. See...I just about have them all.
Oatmeal Toll House Cookies
1 1/2 Cup flour
1 tsp baking soda
1 tsp salt
1 Cup butter flavored Crisco
3/4 Cup brown sugar
3/4 Cup white sugar
2 eggs
1 tsp hot water
1 Cup nuts, chopped
1 pkg. chocolate chips (I use Ghirardelli...they are just the best!)
1 tsp vanilla
2 Cups oatmeal (uncooked)
Cream shortening until soft. Add sugars gradually, creaming until light and fluffy. Add eggs, one at a time, beating after each addition. Add hot water and vanilla to creamed mixture, then add dry ingredients. Add nuts, chocolate chips and oatmeal and mix thoroughly.
Drop by teaspoonfuls on a cookie sheet. Bake at 350 degrees for about 15 minutes.

My View & my Addiction

We have ALL been sick the past week. This is has been my view right now.
Most of this was to keep ME going so I could take care of all them this week. On a different note....as some of you may know I'm totally addicted to these.....


McDonald's Coke. Love them!! More expensive than going to the gas station but way more convenient with the drive thru and I swear they taste better.



So, for Lent I decided to give them up. Not necessarily FOR Lent...I'm not usually one to give up something at this time. I just decided that a couple people I know where giving up things...Coke and Diet Coke included and that I would join them. I am now on day 14 and feeling very proud of myself. I haven't had the headaches but then again I had Bronchitis...so I guess it's a trade off.

My friends on the other hand are losers and both have caved!!

March Already?

The weather may have come in like a lamb around here but everything else is like a lion. A big gross snot filled lion (that graphic enough for ya?). We are all sick...even Hubby...but you wouldn't know it cause he goes onto work like nothing is wrong.

Bubby's symptoms seem to come and go. He likes to put on a brave face like his daddy. Sissy curls up and dies just like me.

Dead (Wo)man walking

Bubby has been sick since last Wednesday. Sissy came home Friday night sick and I've been sick since Saturday night. I took myself and the kids to the chiropractor and he worked all the snot out of their heads and got it going where it needs to go. So, now they are all good but I have bronchitis. Translation: They are bouncing all over the house and I just want to lay in bed and sleep.
